A Reflection on Eggs
Eggs may be one of the simplest yet most complex ingredients on the planet. Many people don’t know the story of the Chef Toque. It was originally used for sanitary purposes back in 13th Century. Long story short, there is claim back in the day that it represents 100 ways to cook an egg. Most Chef Toques only have 33 lines in them. It also represents hierarchy in the kitchen within the Brigade System. The taller the toque, the higher you are on the totem pole. Now it seems the more tattoos you have up your sleeve, the higher up you are. I’m kidding, but there has been a major shift on the culinary world and the culture. You don’t have to be wearing the tall funny hat anymore to be cooking or working around the best Chefs. Regardless, I have alway been fascinated by this and for awhile now, I have been thinking of diving into this a little deeper. Back in Culinary school, one of the recommended books to have in your quiver was Le Repertoire De La Cuisine. Still, to this day, I find myself digging in there for some old school shit. Inside, there are several techniques for cooking eggs. In the coming weeks and months, I plan on showing you some of the less than common ways to cook and egg. Some techniques you probably never heard of. We shall see…
